Sumi
Cocoa, Toasted Malt, Roasted Soybean, Smooth in Milk
Cocoa and toasted malt with a rounded, smooth body that stays clear in milk. Enough depth to hold its own against milk and sweeteners, without a bitter edge. The everyday house matcha for hot and iced lattes and dirty matcha.

About the cultivars
Zhongcha 102China
Zhongcha 102 is a selection from the Chinese Academy of Agricultural Sciences bred for agronomic resilience rather than delicacy. It is high-yielding and notably cold-tolerant, which lets it be planted well outside the mildest tea districts. Its defining sensory trait is a strong tannic backbone: a bold, assertive structure that survives milk fat and sugar intact instead of being flattened by them.
Longjing 43Zhejiang, China
Longjing 43 is a clonal selection out of the Longjing population, developed by the Chinese Academy of Agricultural Sciences in the 1970s and now among the most widely planted selections in Zhejiang. It was chosen chiefly for its early budding and its unusually uniform bud set, which gives growers a reliable, consistent first flush. In the cup it is brisker and more structured than its parent population, with toasted grain notes over a firm backbone.
